  1. Happy Halloween!!

    Thanks for stopping.

  2. Eggplant Parmesan sounds yummy!

    Have a great weekend. :)

    1. It is very good. I use my homemade sauce too.

I don't fry my eggplant so it makes it even better. More healthy.

      Thanks for stopping, Suzanne.

  3. I made eggplant Parmesan once, and My husband really liked it...and keeps asking me to make it again..but I really didn't care for it, so I make it with chicken instead.

    1. If you make the eggplant the way I do, it cuts the bite out of it. :)

I slice it, brush it with olive oil, sprinkle breadcrumbs on it, and put it in the microwave for about three minutes to soften it instead of frying. For some reason when you microwave the eggplant, it isn't as strong.

      You chicken sounds delish.

      Thanks for stopping, Katie.

  4. Thank you for participating in the fill-ins, great answers. Eggplant parmesan is so good, I bet yours is excellent. Have a nice weekend!

    1. I do have to say it is very good. :)

      Thanks for stopping, Ellen.

  5. I've never had eggplant, I will have to try your method for making it! When I grew up in South Dakota it often snowed on Halloween, so we had to wear warm coats under or over our costumes, but that never stopped us from collecting a bunch of candy!

    1. Let me know if you do try the method I mentioned.

Thanks for stopping, Josie Two Shoes.

OH...we did collect a lot of candy. We would stash it under our bed...LOL!!

  6. Those are really nice answers, my friend. I am not a fan of eggplant, though. I think it was an experience from childhood. Blech.
Thanks for joining us each week! Hugs.
    Happy Halloween!
