I made eggplant Parmesan once, and My husband really liked it...and keeps asking me to make it again..but I really didn't care for it, so I make it with chicken instead.
ReplyDeleteIf you make the eggplant the way I do, it cuts the bite out of it. :)
DeleteI slice it, brush it with olive oil, sprinkle breadcrumbs on it, and put it in the microwave for about three minutes to soften it instead of frying. For some reason when you microwave the eggplant, it isn't as strong.

I've never had eggplant, I will have to try your method for making it! When I grew up in South Dakota it often snowed on Halloween, so we had to wear warm coats under or over our costumes, but that never stopped us from collecting a bunch of candy!
